DH and I visited a creamery weekend before last and tasted about 7 of their cheeses. We selected 4 types, spending about $40 in total for about 2lbs of cheese. They had .5 lb portions pre-wrapped instead of cutting and wrapping fresh for us..... I opened the other 2 tonight and neither had been wrapped properly and were ruined. They were softer cheese and there was too much moisture.

Never again do I pay premium cheese prices without watching them being cut and wrapped.

I would not ever expect a piece of soft moist cheese to keep for a fortnight after being cut, no matter how carefully wrapped, unless it was pasteurised, irradiated, biologically-dead factory-made cheese.
