Funeral potatoes!! I had the misfortune of attending a funeral a couple years ago in another state. The church served a lovely lunch after the service and these potatoes were part of the lunch. I really liked these potatoes. I had forgotten about them until just now. This is a keeper!!!

before celiac, I was famous in my neighborhood for my chocolate chip cookies. The perfect amount of soft inside, crisp outside.
It was the basic recipe from the Berkeley and Jensen store-brand of chocolate chips from BJ's Warehouse store. i've seen the recipe online as well; it's kind of basic (differences being 1 egg, and 3/4 cup brown sugar to 1/2 cup white).

The secret was that I'd tested carefully to figure out exactly how long to bake them (in my oven, 11:30 minutes). I think the brown sugar helped too, but mostly it was the timing.
My secret chocolate chip recipe is the one of the back of the Ghirardelli bag.My secret is refrigerating them before I bake them. I have had so many people ask for the recipe. I do share it freely.

I grew up with my mom making chocolate chip cookies by adding the chips to a butter cookie recipe.  I still like them better that way.

At one of our last family holiday dinners, Mom put the chicken on the rack upside down.  That meant the breast wasn’t particularly dark and crisp but it was the tastiest and most juicy chicken we’d ever had.

Since that dinner, I’ve always put the bird in the oven upside down.

Thank you.  I have printed that out.  I hope that's okay with you.  It sounds delicious and I can look for the Golden Syrup at a couple of places that might carry it.  I see that it can also be ordered from Amazon.   :)

I grew up with my mom making chocolate chip cookies by adding the chips to a butter cookie recipe.  I still like them better that way.

My mother used the mint-flavored chocolate chips and the recipe from the back of the package. We loved them!

It's fairly easy to make as well.  My grandmother (Polish) made a version with sugar, water and lemon juice.....and time.  As I recall, it took awhile but not a lot of work.

So, based on what you said, should I reverse the measurements for brown and white sugar if I like my cookies more on the crispy side?

Probably. My newspaper did a story years ago about the effect of various types of sugar and proportions of ingredients; I've seen others like it online.
