Cheese Sauce:
1 tbsp butter
1 tbsp flour
1/8 tsp pepper
3/4 cup milk
3/4 cup shredded cheese - I like to use old cheddar
Melt the butter in a small sauce pan. Stir in the flour. Add the pepper. Slowly add the milk, all in one shot, while stirring. Cook over medium heat until the sauce is bubbly and is thickened. (If you just want a white sauce, you'd stop here but also add about 1/2 tsp of salt with the pepper). Turn down to medium low and stir in the shredded cheese until melted.
Serve on various vegetables - broccoli, cauliflower, asparagus
