Breaded pork chop, brussels sprouts, and a low carb brownie for dessert.

Is that one where you use something like sweet potato?  I hope you don't mind me asking, but my weight has started to creep up again, and a low carb brownie recipe sounds like just what the doctor would order!

Sure thing! This is my own recipe:

Low Carb Brownies
¾ c. almond flour
¼ c. cocoa
¼ teasp baking powder
1/8 teasp salt
2 eggs
half a stick of butter
¼ teasp vanilla
4 teasp sweetener
¼ c. cream
Combine dry ingredients, add the rest. Spread 1/2 inch thick in a parchment-papered pie pan (the batter doesn't have to reach the edges of the pan), bake at 350 for approx. 25 min. Check with a toothpick or knife blade to see if it's done. Remove from oven and allow to cool. Cut and serve with low carb ice cream, whipped cream, or pumpkin mousse.

They come out fluffy and moist, but if they are baked too long they come out dry. That's when the low carb ice cream comes in handy.  ;D

Tonight I baked some turkey Italian sausages in the oven straight from the freezer. I steamed some greens and mushrooms, added jarred marinara and fusilli, then chopped up a sausage link and mixed it in. I had pilot bread on the side and caramel chocolate for dessert. Good way to start the week!

Anytime I make polenta I always end up making enough to serve it 2 nights in a row, so yesterday was teriyaki steak with polenta and “California” vegetables (broccoli/cauliflower/carrots) and tonight was mustard oregano chicken breasts, polenta and broccoli - I made a quick mustard sauce from the “drippings” and it was absolutely delicious, if I do say so myself.  No dessert tonight but I made some brownies over the weekend that are just a memory!

Meatloaf with steamed vegetables and brown rice.
I used a mix of ketchup and bar-b-q sauce instead of the tomato sauce called for.

I might make this sooner than the usual once-every-five-years because it was tasty.

This last week has been chicken salad sandwiches with corn chips and sour cream cucumbers, which I haven't eaten since last summer. They're so yummy.

It comes from Ruth Matson's Cooking by the Garden Calendar, which I first read at a friend's house years ago. I do cut down the sugar by half or even two-thirds, because one tablespoon was way too sweet for me. You can use dried herbs instead of fresh, just cut the amount in half. The other change I make is to peel the cucumbers and cut them in chunks. I like to make this the night before so it has a chance to marinate.

Roasted asparagus (from the garden, we live in one of the main regions in the US where it grows easily) and pasta with diced fresh tomatoes and fresh grated Parmesan cheese.

It's Memorial Day and it's hot, so I did hot dogs on my George Foreman with the sour cream cucumbers above and potato chips with French onion dip. Chocolate pinwheel cookies for dessert.

We’ve been getting ingredients and online recipe details from a local restaurant. Each week they do a different country’s cuisine. Today was Chinese Kung pao chicken. It’s pretty good value and takes the pressure off deciding what to make each night.

Was originally planning on making chicken tikka masala but my SO isn’t feeling that great so I’m going to make chicken soup instead - I started using this recipe from the Seattle Times last year and it’s easy and delicious! When I sauté the veggies for the final step I toss the diced chicken in at the very end just to warm it up/taste it one more time before adding to the broth.
