Saturday evening, my daughter and I stumbled our way through Orange Chicken. She found the recipe on YouTube - the guy wanted to make better Orange Chicken than is served at Panda Express. We doubled the recipe, had to make a substitution or two. Also had trouble keeping the oil hot enough (I don't think we had enough oil and by that time, I'm sure I was impatient and was overcrowding the pot). Nevertheless, it turned out delicious! Probably won't make it again anytime soon, but it was fun working together.

Tonight it's BLTs with turkey bacon, tortilla chips, baby carrots with ranch, and vanilla pudding with the last of last year's frozen strawberries.

Got some leftover BBQ pulled pork out of the freezer this morning. Not sure what I'll serve with it.

Fake risotto. I'm cooking basmati rice in the cooker, then steaming mushrooms and peas and adding them to it. On top I'm putting parmesan and a side of turkey bacon. I'll have it with a hot roll and strawberries for dessert.

Dinner: asparagus soup.

Homemade meatball sub with mushrooms and tomato, sour cream and onion chips, and a vanilla milkshake. I made the meatballs a couple weeks ago and froze the batch, so I can do one sub at a time. Reheat it with marinara sauce, toast the bread, and then pile everything on and pop it under the broiler for two minutes. Then all I have to do is blend the milkshake. Yum.

Carry in of tofu Pad Thai and cashew chicken stir fry.  The 1st two choices of indie restaurants were either closed or so busy no one answered the phone.

Paleo oven - fried chicken (egg wash with salt, pepper, and paprika, then dredged in a blend of almond flour, salt and pepper, Cajun seasoning, chili powder, and thyme), and roasted potatoes with salt, pepper, garlic and onion powders, sage, rosemary, and thyme! Definitely a family favourite in the violinp/Double Bass house  ;D
