Low country SC style BBQ (mustard based sauce) pulled pork and hash served over rice. We had steamed veggies for sides.

even though I really miss worshipping with others.

I think we are going to discover two things:

1. We do not need some of the "butts in the seat" human presence that we have insisted upon.

2. We need contact with other humans.

My DD requested deviled eggs, so I made a dozen. Other than that, salmon, rice and peas. Will wait until we can have our traditional Easter church service, then gather with family to have our traditional Easter dinner.

Pizza. It wasn't worth it to spend hours cooking a traditional Easter ham and sides, or even a regular home cooked meal like chicken or meatloaf.

But don't feel sorry for me. I love pizza and don't eat it often. :D

I had some little filet steaks in the freezer that i forgot about. So I had one of those along with spiced cheesy au gratin potatoes, and garlicky bean salad. Also deviled eggs.

Roast beef (bought one and cut it in half, froze the other part for later), with roast potatoes and parsnips.

Did a lemon pudding cake for dessert, which was yummy.

I worked Easter Sunday and had hoped that dh would put the ham in the oven but he's never cooked a ham before and didn't want to.  Instead I pulled out some bacon and made "breakfast for dinner."  Being off on Monday, I made vegetable soup, ham baked with pineapple rings and cloves, steamed cauliflower, and mashed potatoes.  And now we have leftovers.  Yay!

Roast leg of lamb, roast potatoes, roast parsnips; braised red cabbage, green beans.  Gravy.  Followed by baked apples stuffed with sultanas and dried apricots, and condensed milk.

We invited my bro-in-law (he lives in London) and our two children (who live ten miles from us), and there was a frantic scramble to get the laptop updated so that we could do a FaceTime call with more than one screen.  But it went well!  And the children were very envious of our roast dinner.

I love lemon based desserts so much - would you care to share the recipe?

Sure, I just googled - it’s a recipe my mom used to make, but I didn’t have it.

Good if you have eggs but not much flour. https://www.landolakes.com/recipe/16713/baked-lemon-pudding-cake/
