You will find gluten hidden in lots of things that you don't expect, including burgers, sauces, salad dressings, etc.
When I first started having to cook gluten-free for my husband I checked every label even on products that I didn't think would contain gluten - some of the products I found it in really surprised me. The other thing to consider is that some gluten-free products taste better than others, so it may be worth checking with your niece whether she and her daughter have any preferences.
